Carne asada street tacos and Ensalada de papa

Ingredients;

2 lbs Skirt Steak (lbs depends how many tacos)
1 cup Orange juice
1 tablespoon Carne asada seasoning
1/2 Onion
3 Limes
16 small Tortillas
1/4 Oil
3 bunches Green onions

Put meat in bowl, add seasoning to your liking. Drench in orange juice. Add cut up onions( circles). Marinate for 2 hours best over night. Bar b q meat. At this time grill green onions. Chop up meat. Get small corn tortillas. Dab one end of tortilla in oil and put on comal. Two tortillas per taco. Once tortilla is semi crisp or warmed up to your desire put tortillas on plate. Add meat, onions, cilantro, guacamole, and salsa. Lime is optional

Guacamole
2 Aguacates
1/4 Onion
1 1/2 Roma Tomatoes
1/2 bunch Cilantro
1/2 small Lime
1 teaspoon Salt

Mash aguacates to desire consistency. Chop up onions, cilantro, tomato and add to aguacates as well as lime amd salt. Mix and chill

1/4 Onion
1/2 bunch Cilantro

Chop onions and cilantro. Put in separate dishes according to people’s liking

Potato Salad

6 potatoes
3 eggs
2 celery sticks
1 large carrot
1 bunch of green onions
Half a can of black olives
4 tablespoons of Mayo
1 teaspoon black pepper
Salt to liking

Boil potatoes with salt. Chop up celery, green onions, and olives. Peel carrots and either shred or chop up carrot. Cut up potatoes. After eggs are fully boiled, cut up in small pieces. Add all ingredients together including pepper. Mix with Mayo (Add more or less. Mayo is to liking. Put in fridge to chill.
