Easy and cheap Taco Soup
(Serves about 4-6)
Ingredients you’ll need:
•6 cans of beans (pictured are the beans I use)
(Some are saying it’s too much bean, use the quantity you like)
•2 10oz cans of diced tomato with green chiles
•1 can of beef broth (about 15oz)
•1 pound of ground beef
•1 taco seasoning pouch
•2 ranch seasoning pouches
• 1-2 Cans of corn (this is optional, I omit it because I don’t like the flavor)
•shredded cheese your preference (I used Mexican blend)
•In a medium pot add in all your canned beans (bean juice and all) DO NOT drain the beans!!!! Add in your diced tomato with chiles, your beef broth, and your two ranch seasoning pouches
•If you choose to add corn, drain the juice and only add the corn kernels to your pot.
•cover with lid and let it simmer on medium heat while you brown your beef
•In a separate pan, brown your ground beef. You can choose to add a pinch of garlic powder and pepper but the taco pouch will give you all your flavor. Once the beef is browned and about ready toss in your Taco Seasoning pouch and about 1/4 cup of water, mix, and let it cook for a few more minutes. Then add it in to your simmering pot of beans.
•After all your ingredients are now mixed in one pot, put it up to Med-high heat & cover with lid. Let it hit a hard boil and turn it down to low simmer for an extra 5 minutes and you’re done.
•Serve with shredded cheese, sour cream and some tortillas chips on the side.
